Whelks with boreal brine

115g. This recipe is our (very) improved version of the classic “brined bourgot” that can be found in most fish stores in Quebec. It is the meeting of both our culture and our nature. Our brine is infused with a wonder from our forests, myric balsam, which brings a scent of fir, slightly peppery, reminiscent of nutmeg. Very pleasant to the bite and fresh in the mouth, this bourgots recipe is an ode to the Nordic nature of Quebec.

Whelks with camelina oil

175g. Bourgots preserved in camelina oil are the result of a perfect composition of complementary flavors. Our quest for original ingredients produced in our regions allowed us to unearth camelina oil, a high quality oil appreciated for its hazelnut accents, as well as wild caraway, a spice from our local flora which presents notes of cumin. These flavors, both sweet and warm, combined with that of the bourgot which slowly melts in the infused oil, create a soft and highly pleasant product in the mouth. Even the most skeptical will be confused.

Lobster bisque whelks

175g. Combining bourgot with lobster bisque combines the best of Quebec's culinary heritage. The roundness of the bisque enhances the salty notes of the bourgot, creating a velvety fishiness that you can savor until the last drop.
