It is a farmhouse cheese, made from raw organic cow's milk, with a pressed paste cooked and matured on a wooden board. Its orange-yellow rind gives off a pleasant woody odor. It stands out particularly for its supple texture and the complexity of its aromas of fruit, caramel and honey.
