Made from pasteurized milk, this semi-firm cheese with a washed and brushed rind is matured in a roasting room for nine weeks. The cheese has lactic, rustic, earthy and vegetal aromas. To taste, it is long in the mouth and its flavor of cream, fresh nuts and green apple varies from mild to marked.
