This cheese is made from pasteurized milk from a single herd of cows belonging to a neighbor of the cheese factory. Pizy is a soft farm cheese with a bloomy rind. Its runny paste gives off smells of fresh milk and mushrooms. It offers milky flavors, salted butter and a touch of bitterness intensifying with maturation.
