Soeur Angèle is a double cream type cheese named in honor of the famous nun known in Quebec for her teaching of cooking. Surface-ripened for 4 weeks, it has a beautiful flowery rind. It reveals a runny dough made from a mixture of cow's milk, goat's milk and cream. It offers flavors of milk and cream with a slightly goaty touch. Part of the profits from this cheese is donated to the Sister Angèle Foundation founded and overseen by it and which helps disadvantaged young people.
